Frittata: Best Kitchen Discovery Ever

Frittata may sound fancy, but do not be deceived. It's Not very fancy. Frittata is one of the best meal options for busy, frugal people who want to be healthy.

If you have 8-10 eggs and an oven-safe skillet, you probably have everything you need to make a frittata. You will want to put other things in it, but as long as you have the eggs, I'm sure you can do it.


Preheat the oven to 350. Put some oil or butter in your skillet and heat it on medium-high heat.
Crack and beat 8-10 eggs. Add a little milk if you want.
When the oil is hot, you can add your frittata filling. Be sure to have it cut up and ready to go before you begin.

What do you put in a frittata? 
Pretty much anything:

Personally, I wouldn't want to make one without onion and cheese.
cheese
onion
garlic
beans
frozen veggies
mushrooms
peppers
spinach
tomatoes
cooked pasta
cooked rice
cooked potatoes
lunch meat
cooked meat
anything you have left over from another meal

Seasonings like onion and garlic powder, Italian seasoning, salt, and pepper work well.
If you are using Mexican foods, Chipotle, chili powder, and cumin work well.

I have never made the same frittata twice, and I've never made one that I didn't like.

Ingredients like onion and fresh mushrooms (two of my favorites) will need to saute a little before you add the eggs. Once onions are starting to get translucent (about 4 minutes), add some spices and whatever else you want to put in (except the cheese, save that for last.)

Turn the heat down to medium-low, and add the eggs. Stir it around so the eggs gets all the way to the bottom of the pan.

Then put in the cheese. Shredded works best, but I've also just ripped up slices or even used cottage cheese.

Let it cook on the stove for about 10 minutes. The bottom should be set, but the top will still be pretty jiggly.


Transfer the whole pan to the oven.  It usually takes 8-11 minutes in the oven, but this is hard to say for sure because it will depend on how many eggs you used, how much filling you used. For this one I let it bake for 8 minutes, then I turned on the broiler and left it in for another 2-3 minutes. 



When the cheese on top starts to get bubbly and brown, it's time to take it out. 

Beginner Tip: You are probably not accustomed to having a skillet in the oven. The handle is hot! Put a pot holder on it so no one grabs it by mistake.


Let it set for a few minutes, then cut it up like a pie and dig in! It's good warm or cold, and perfectly appropriate for any meal of the day!
